Pho real? Pho sure!


The first meal we ever shared was over steaming bowls of Vietnamese Pho.  Since that time, it has become a weekly tradition.  We even went as far as to travel to Little Saigon.  Although I am vegetarian, I don’t mind soups with a non-veggie broth.  (Instead of chunks of meat in the broth though, I usually ask for tofu.)  If you want to make a completely vegetarian/vegan pho though, here is an ingredient list to get you started.  (We don’t usually just estimate when we cook, so you will mostly find estimates or ingredient lists.)  To make the broth, you will need:
·         Vegetable bouillon
·         Onion
·         Garlic
·         Shallots
·         Ginger
·         Star anise pods
·         Cloves
·         Cinnamon sticks
·         Soy sauce
 After the broth has been prepared, you can add:
·         Rice noodles
·         Tofu
·         Scallions
·         Bean sprouts
·         Basil leaves
·         Lime wedges
·         Hoisin sauce
·         Sriracha chili paste
